whetstone.. generally the oddball lil preset knife sharpeners where you just stick the knife into mess up alot of knives.. they change teh angle of the grind on the blade to whatever it's set to.. although if you find out where you can adjust the angle (which I have seen somewhere) then I suppose it would work find.. But generally a whetstone is the fall back you wanna stick with.. practice.. alot..

a whetstone here, but I need a lot of practise before attacking my good knives with it so as not to completely destroy what sharpness dows remain in the blade...

Get a Gatco system you'll never regret it.
Sharpens all types even serrated and has a guide right inside of the box to show you which angles work the best for the intended use of the blade. Also with the clamp and angle guide you never have to worry about using the wrong angle its the same every time.
