It fools the camera becuase they cannot see your face, The IR probably cannot penetrate the sheet (300 ct egyptian cotton) and it blocks the piezo speaker's sonar.(saw that last part on mythbusters). Security guard: "what the hell is that the KKK?"

There was a mythbusters episode on this.. and the sheet did work. See "Thermal Motion Sensor" and "Ultrasonic Motion Sensor."
