I imagine they just cut away the walls and floors and everything piece by piece and then cut away the supports starting from the top down. Then put a roof in place and reno'ed the bottom floors. I have seen it done once before on a 4 story house turned into a 2 story after a fire, but never on this scale. It's hard to imagine it being practical at this scale.
