perhaps because of toxic fumes..you know, higher the ceiling, more air circulation, that sort of thing. just a guess

A lot of factories are like that. Perhaps also to let the heat rise, keep the workers a tad cooler?

I would think the architecture of the building has very little - if nothing - to do with the comfort of employees. Perhaps it is because of a regulation regarding air quality?

Factories are rarely built for a single purpose for an expected lifetime. That, coupled with the fact that they need to generally build taller as they build wider, results in a larger building by default. Remember, these were expensive investments; what manufactures ammunition today may manufacture portable bridges in 10 years or any other item.
