Maybe the wax was used to seal the cheese?

It isn't wax. It's too hard and dense. Plus I think the melted patch was the work of vandals or drug users.

A big block of Teflon?

Teflon impregnated Nylon?

Looks like it could have been some sort of seat, maybe part of a machine that is no longer there?

Teflon is a good guess. But a seat? I think it would be pretty uncomfortable. It's too small and hard.

Maybe a stand for wrapping cheese, if this was done here.

Possibly, but why not have a whole table? This thing is only about 10" x 6", and this factory made a hell of a lot of cheese!

place the chese exatly on it and wrap with cloth the right size, it's a cost thing, big table, or little table.

Maybe, although I'm still not convinced. Perhaps we have some expert cheese makers here?

You also get to put your stool/chair up to it as close as you can.

Maybe. But I would have expected to see more of them if that was the case. I think it may have been part of a testing or quality control area.

Yeah, there should be more, or none if they're worth anything. It could have been a testing area.

It is close to a lab-type wooden bench which you can't see in the photo.

could you press it in with your fingers?
Could it be this thing was chilled via the stand pipe?

I couldn't make indentations in the white block with my fingernails. It didn't appear to be connected to any refrigeration gear.

Probably a block of Delrin, a slippery plastic used to make bearings - I think it was a support for a conveyor belt, probably at its midpoint, that would let the belt slide over the top.

I could believe that, although there was no sign of the conveyor belt equipment, and the belt would have had to have returned overhead. It's as good a guess as any.

On the far left It looks as if another pipe is coming out. If that was so, my bet is on it being refrigerated and this table is to sample something or so... what kind of room was this in?

It just looked like a store. Might have been a cold store, but it wasn't obviously refrigerated.
