Maybe I fail to see it since I am not a photographer.. but how is mailing a print different then emailing the 'exact' digital image so they can print it at thier local shop any different? *shrug* was just an suggestion to make things faster/easier.. streamline the process..

I need to see the finished print and how it was done and what it looks like before i'd want my name on it. I know people are looking at my picutres all over with differently calibrated monitors anyways, print are the one thing i have total control of. Some printing places like to mess with them, change levels, have some computer auto treat it etc. ick. and also i like to sign my prints and would much rather have a print signed by the photographer

exactly...you don't know exactly what a print looks like until the moment you walk out of the darkroom and into the light (the safelight has a tendency to make pictures look darker than they really are).
OK, so here's what I can do (silver print wise): 5x7 (Ilford Multigrade III RC/Glossy) <-gorgeous contrast, might have something to do with the age of the paper) 5x7, 8x10 (Ilford Multigrade IV RC/Pearl) <-not too shabby either, especially on higher contrast grades 5x7, 8x10 (Kodak Polymax RC/Glossy) <-actually, I haven't used it yet. 8x10, 11x14 (Ilford Multigrade IV Warmtone FB/semi-matte) <-mmm mmm good.
