I think this thread was one of the first ones I ever made on this site. As soon as I posted it, I thought "Oh, that's kind of a dumb thing to ask". A total newbie question for sure! Anyway, all of this info has proven to be extremely helpful.

A lot of Cities/Principalities are moving almost every aspect online. One I've found extremely helpful in addition to County Property Appraisor is the City/County Permit Office. This is a good way to spot if there's anything going on at an active site, since most major work/renovation requires papers to be filed with the govt for approval (or so they can raise their taxes).

Clerk of Court is always interesting as well, since mortgages and other financial and legal documents are filed there. Most only go back 10 years or so though (tons and tons of paper to scan!) but it will typically return the book and page number that you need to ask for, and a lot of times will return the parties named in the documents.
