Also for a crispy coating next time my friend suggested chickpea flour coating. Will try again soon! edit: i also added garlic and green onions

avocado pesto Shit ton of raw garlic, finely chopped 1 handful of kale, finely chopped 1 large sized ripe avacado, 1cm cubes or smaller 1 tbsp of flax seed oil Mix/mash to desired consistency. To eat like salsa, or to use as bruchetta, I added 5 table spoons of fresh salsa.
The bread is baking as I type this. Can't wait.

My aunt used to work at a bakery. She now has Celiac, but still continues to bake yummy things. Her general wheat flour substitute: 1c wheat flour = 2/3c rice flour + 1/3c potato starch or corn starch Corn starch gets crispier
A recipe for a double pie crust: Dry ingredients 1c white rice flour + more for dusting 1/2c corn starch 1/2 c potato starch 1tbsp granulated sugar 1/2 tsp salt Wet ingredients 1/2c (1 stick) cold butter cut into pieces (or 1/2c solid vegetable shortening) 1 large egg 3 or 4 tbsp cold water ***Note: My aunt leaves out the sugar. Butter and water MUST be cold - crumble into meal consistency***
- Whisk together dry ingredients
- Using a fork or pastry cutter, work cold butter or shortening into flour mixture. Add egg and water. If dough is dry, add more water 1tsp at a time. Stir until a dough forms.
- Divide dough in half, wrap in plastic wrap, and chill for 1hour
- Remove from refrigerator and let sit for 15 minutes
