I got a Gopro that I would love to take with me for action shots, climbing ladders etc. but i’m curious about its low light abilities. Obviously the easiest way to test it would be to simply bring it along but if y’all have any experience or tips for using it or have settings you recommend, i’d love to hear it!

I'm interested in knowing this too. Debating on if I should get the Go pro 7 or 8. Both have pros and cons. Tend to drop things alot and not sure if I want the 8 because you can't replace the screen.

You could take a look on Youtube about low-light tests of the GPH8.
Maybe if you are in a very dark environment you could install it on a chest mount and grab a head-mounted flashlight?

Can't speak for the 8, but I have the 7 and it handles itself pretty well in most situations. Like anything though, it has its limits and for use at night and in truly dark areas, like tunnels or fully-boarded rooms, you'll want a clip-on light or something. As long as it has some kind of highlights/reflections to work with, it should be fine, but it doesn't work miracles either.
Skip to about three minutes in and you'll see it performing indoors during daylight hours, but where the windows are covered in vines. It was actually fairly dark inside considering, and it came out quite well: https://youtu.be/k5MKvKkn3kU
I also recommend manually setting an ISO maximum of 800, as the quality really starts to go downhill after that.

On my cams I've replaced 2 LCD screens.
They break pretty easy.
Broke one on my padded work bench cleaning the cam; less than a 1 foot drop... butterfingers
Tether it to your chest.
However if you're squatting down and drop it, it will hit the ground.
You can wrist tether too.
Some cam neck straps have a place you put your hand through. I've used this method as well.
Never have dropped a cam I was carrying in my hand...
Just when I thought I was out... they pulled me back in.

I recently purchased an GP8 but haven't tested it in low light yet. My hope is to set up a "mini-rig" (microphone & LED light panel on an L-bracket) to use underground. I've used an old Canon camcorder and didn't have very good luck. I want small and rugged, but not sure I can get the quality I want. I don't want to dump a bunch of money on a good low-light camera to take underground with me. The conditions would eat a camera alive.

Well on the subject of night vision, I'm hearing some really good stuff on the Sony FDR X3000. It supposedly has some of the best low light performances for an action camera. I'm thinking of investing in one. I don't think there's an upgraded version of this though...?

I've heard the 7 screens breaks easily, just not sure if I like the whole not being able to replace the screen on the 8. Much rather replace a screen then have to buy a new GoPro because the screen is cracked.

Better to hear about it than witness it!
That's on Canons. Screens seem to have a bullseye painted on them.
Lens have pretty good protection but less so on the other end.
If the cam lands on the screen end... you'll want one that's repairable.
On the 5D the screen and control panel were marred pretty bad so I replaced them. Those parts are not too expensive.
The overall weigh of the cam/lense has a relationship to the amount of damage in a general sense.
The heavier it is... if it lands on the screen.
L lens can soak up some pretty heavy impact if they have a UV filter and hood on with no damage... LCD screens don't do so well
Always use a microfiber cloth to clean the screen to avoid scratching it.
Just when I thought I was out... they pulled me back in.
