Is rooftopping (I.E. climbing on roofs of not-so-abandoned buildings) still considered Urban Exploring? Me and my friends are usually in an abandoned building or just chilling out on a random local roof.

Virtually all I explore are active buildings - there are so many awesome things to see in them; roofs, mechanical rooms, elevator machine rooms, cooling towers, billboards on the roof - and sometimes you get really lucky and find an active utility tunnel out of it. Exploration is exploration, and urban is urban - state of abandonment really doesn't play a factor in whether it's "UE" or not.
