Lovely sauce, I served it over bacon wrapped chicken medallions, but it would go well over various things. It also involves fire, which is just fun.

Whiskey and Peach Maple Glaze

2 fresh peaches, peeled, halved, and sliced.

3 tablespoons clarified butter*

2 shallots, thinly sliced

pinch of black pepper

1/4 cup whiskey

1/4 cup pure maple syrup

1 1/2 tablespoons good quality balsamic vinegar

Prep and set aside peaches.
Heat clarified butter over high temp and quickly saute shallots and pepper, stirring constantly.
When shallots are golden in colour (about 4min), remove pot from the burner, then add whiskey and flame (hahahahaha yay fire!).
Return to the burner and add the peaches and saute until they are slightly softened.
Stir in maple syrup and cook until mixture is reduced to a thick syrup.
Remove from heat and add balsamic vinegar.
Serve warm.

Yields 1-1 1/4 cups of sauce.
