When I was in cooking school I was the only person that they let use a 5 inch blade that wasn't a paring knife. I have tiny hands and am accident-prone, the sight of me with a 9 inch chef's knife was petrifying. I have to stick my tongue out the corner of my mouth to Brunoise!
I live for my Santokus, I also have the 5" Henckels and a 5" ceramic one my granny bought me at Williams Sonoma. I'm sure I'll shatter it so I rarely use it.
I love the Henckels because it stones up nice and steels like it's singing.
