I don't see this being a big issue, really. Most owners who are concerned enough to have a security system probably won't want to bother with some DIY iphone camera- they will hire a company, who in turn will put in the cheapest equipment available that will still function. Motion detectors, patrols and passive security measures are much cheaper and probably more reliable, so I don't see a bunch of buildings all of a sudden rigged up with iphones all over the place

I could be wrong, though; it wouldn't be a first

You'd be wrong except for my personal experience/brush with this cheap technology that's easy to setup, maintain, and works pretty darn effective.
