I'm looking for some good recipes for taking along on a longish canoe trip where refrigeration is not available.

Any suggestions?

Good, but heavy to carry, unless you carry the dry, than the beans take a while to soak, but that can be done.

We survived on pancakes, jut add water!

But we were traveling around too so there were grocery stores for fresh fruit and vegetables.

Yes...excellent idea.

Also, pick up one of those wilderness food guides, and learn how to identify edible plants/roots. It's a lot of work, and one must take care when foraging, but the plus side is that when the giant meteor strikes/zombies take over the earth, you'll be one of the few who survive.

If you don't mind lugging a bunch of potatoes into your campsite, I recommend this:

1) cube the potatoes to 1"
2) put in pot of cold water, bring to boil, drain. DO NOT over boil potatoes. They should be firm.
3) in a pan of olive oil and butter, brown until golden.
4) ADD diced red onion, rosemary and garlic. ADD LAST and just before you feel the potatoes are golden to your satisfaction. Garlic should be chopped, not minced or crushed. Otherwise, it will burn and turn bitter.
5) season to taste.

They are delicious. Best served with scrambled eggs seasoned with Parmesan cheese, and double smoked bacon.

Last time we went camping I went for a swim and picked up 20ish fresh water muscles. Cook them well and add some bbq sauce. Tasted kinda swampy, but it's food.
