"Stuffed Jalapeno's with cream cheese and bacon"
easy to make and a great appetizer or bar style snack food.


prep time: 20min
cook time: 20min

what you need:
-10-20 jalapeno's
-i pack of bacon
-cream cheese
-toothpicks

what to do:
#1 cut jalapeno's in half- length wise and remove the stem,
#2 clean out the seeds and the white membrane,
#3 if you don't like them too hot, soak the cut jalapino's in cold water for an hour,
#4 spread cream cheese in the halfs to taste but no more then level,
#5 cut bacon strips in thirds, and place one third on each pepper half, use toothpick to secure the bacon,
#6 pre-heat your oven or toaster oven to 400'F, on the middle rack back for 20 minutes- broil for a few minutes if you want crispy bacon.

these also can be pre-made then frozen.
cook from frozen for 30 minutes.

*wash your hands with dish detergent after handling jalapeno's...

the B.L.A.T.
the Bacon, Lettuce, Avocado and Tomato sandwich

pre time: 10 mins

what you need:
- 3-5 slices of back bacon
- 2 pcs bread, whole wheat is better for you...
- 1/2 a tomato
- 1/2 an avocado
- lettuce
- mayo

what to do:
#1 fry bacon and toast bread to taste
#2 while bacon is cooking, thinly slice lettuce, tomato and avocado
#3 spread mayo on toasted bread
#4 add bacon, lettuce, tomato and avocado to toasted bread, salt and pepper to taste
#5 photograph and...
#6 enjoy!

"Cold Corn Salad"
as known as "Gaundu Corn Salad"
a great recipe for any meal anytime of the year, to be served cold.

prep time: 30 mins
sitting time: 3 hrs

what you need:
-1 kg frozen corn, boiled and chilled
-3/4 cup diced red, green yellow pepper
-1/2 cup diced celery
-1/4 cup diced onion
-1/4 cup chopped cilantro (fresh)
-1/4 cup chopped dill (fresh)
-3 TBSP extra virgin olive oil
-2 TBSP curry powder
-1 TBSP cumin powder
-1 jalapeno (optional)
- salt to taste

what to do:
combine all ingredients in a bowl,
mix well.
refrigerate for a min of 3 hrs.

will keep for 1 week.

1 large block of Velveeta cheese
2 cans original Rotel diced tomatoes
1 log Owens spicy ground sausage

First cut cheese into 1 inch cubes. Place cheese in crock pot and melt on medium heat. When cheese is almost melted, add undrained rotel tomatoes.
Now in a medium sauté pan brown sausage until done. Add the sausage to the cheese mixture, then cover and simmer until thoroughly heated.

Serve with Tostada chips at parties or any group occasions.

Caramelized onion and sweet potato and aged cheddar dip

2 sweet potatoes
1 large onion
2 tbsp balsamic (marinade with the onions)
2 tbsp sour cream or plain yogurt
1/2 brick cream cheese (at room temp)
1 tbsp curry powder
1 tsp salt
1/2 tsp pepper
1 1/2 cups of grated cheddar cheese

1. Wash sweet potatoes. Puncture a few times with a fork. Place on paper towel on microwave-safe dish. Cook on high for 4-5 minutes for the first potato, plus 2-3 minutes for each additional potato. Turn over potatoes halfway through cooking.
2. Slice onions and begin to caramelize in butter and olive oil in frying pan. Continue to stir until golden colour (add balsamic)
3. When potatoes are tender remove skin and place in food processor. Add caramelized onions and puree until smooth.
4. Add balsamic, sour cream, curry, salt & pepper and cut small pieces of cream cheese and pulse in food processor until well blended.
5. Place mixture into mixing bowl and add grated cheddar, stirring by hand.
6. Select small casserole dish, loaf pans, or ramekins. Spray with non-stick spray.
7. Spread dip into container(s) and top with additional grated cheddar.
8. When read to bake, preheat oven to 350 degrees. Remove plastic wrap and replace with tin foil.
9. Bake approximately 20 minutes. Remove tin foil and continue to bake until lightly brown on top and bubbling around edges.
10. Let cool 10 minutes. Serve with crackers, baguette, green and red pepper slices.

It may not look amazing, but it tastes fantastic.
